The main factor is the food you eat - especially sugar and carb rich foods. Other things that can affect sugar levels are exercise (when you exercise your body releases your glycogen stores to give you more energy) and stress levels (when your stress levels are high your body goes into “fight or flight mode” also releasing those glycogen stores). Spikes from exercise are not a problem, because your muscles are immediately using up that glucose.
